The Guide to Italian Coffees and Roasteries is a debut publication that will map Italian roasteries of all sizes, of every Region and Province.
The Guide is designed to offer coffee lovers a useful tool to select their ideal blend or single origin among thousands of options available on the market.
The Guide is also an exclusive and unique opportunityfor all roasteries to showcase the most valuable features of their business and their best coffees.

Are you a coffee lover looking for your ideal coffee match? For each roastery, you will find a description and a qualitative assessment of the products we tasted and reviewed. The description will highlight the sensory attributes and the individual notes recognised during the tasting session.
EXPLORE THE APP CONTENTS
The APP version will allow users to search coffees based on the type of product (coffee beans, ground coffee for moka pot preparations, single-doses) and on their Flavore®, just by typing the selected note (i.e. cocoa, caramel, red fruits, etc.)

COFFEE QUALITY ASSESSMENT
THE TASTING PROTOCOL
Coffees will be evaluated in our laboratories following a precise preparation and tasting protocol based on the specific brewing method. The 4 tasting categories will be:
SUPER RECCOMENDED
Every year the Guide highlights the “Super Recommended”, that is a coffee from each roaster that deserves to be tasted. This mention can refer to the particular quality of a coffee but also to its peculiarity, history, intangible value and every distinctive element that makes coffee a real must to try at least once.
DISCOVERING THE FLAVORE®
Within the Guide, coffees will be described according to their Flavore®.
What is the Flavore®?
Flavour is a combination of aromas, tastes but also tactile sensations perceived during a tasting session. Through this multi-perception, tasters can provide a clear, specific and precise description of food and drinks. This is the main innovation of the Guide: for each coffee we will highlight the main flavours perceived, such as cocoa, biscuit, apple or orange. Coffee enthusiasts will therefore be able to easily search for their ideal product.
The aim of the Guide is to progressively grow a complete repertoire of Italian coffees.
For this reason, the Guide has not set any minimum quality standard and evaluations will only be expressed in positive terms.
The sensory analysis released by the panel will be validated also in relation to the product sheet received from the roasting company.

THE AUTHORS
Mauro Illiano
Lawyer, freelance journalist and founding partner of Napoli Coffee Experience. Mauro Illiano is a professional coffee taster with a diploma from the Specialty Coffee Association. Currently President of Napoli Coffee Experience, he has published a number of articles on Italian newspapers and trade magazines, along with several books. He is actively involved in the promotion of Italian and Neapolitan Coffee’s nomination to UNESCO’s List of Intangible Cultural Heritage.
Andrej Godina
Coffee expert, PhD in Science, Technology and Economy of the Coffee Industry with a dissertation focused on espresso sensory analysis. He is an official trainer of the Specialty Coffee Association for all the modules of the Coffee Skills Program and a consultant for the main Italian coffee companies. Since 2017 he is the President of Umami Area Honduras, the company managing finca Rio Colorado, a plantation producing socially-responsible Specialty coffee.
